**Ingredients:**
– 1 kg mutton (cut into large pieces)
– 2 tbsp ginger paste
– 1 tsp garlic paste
– Whole spices (2 cinnamon sticks, 4 cardamom pods, 6-7 cloves)
– 1 cup fried onions (beresta)
– 1 tbsp red chili powder
– 2 cups liquid milk
– 2 bay leaves
– 4-5 green chilies (whole)
– 1 tbsp lemon juice
– 1 tsp garam masala powder
– 1 tsp sugar
– 4-5 boiled eggs
– 1 tbsp ghee
– Salt to taste
– Oil as required
**Instructions:**
1. **Prepare the Mutton:** Start by washing the mutton pieces thoroughly and draining off excess water. Rub salt and lemon juice onto the mutton pieces and let them marinate for a while.
2. **Marinate the Mutton:** In a separate bowl, combine all the ingredients except for the boiled eggs, green chilies, garam masala powder, and ghee. Coat the mutton pieces well with this mixture and allow it to marinate for at least 30 minutes.
3. **Cooking the Mutton:** Place a saucepan on the stove and heat some oil. Add the marinated mutton to the pan and cook it on medium heat until the meat is well-seared and the spices are fragrant. This process helps in locking in the flavors.
4. **Add Liquids:** Pour in the liquid milk, followed by 1 cup of hot water and the sugar. Stir well and continue cooking the mutton until it becomes tender. Keep checking to ensure the liquid doesn’t dry out too quickly; add more water if necessary.
5. **Final Touches:** Once the mutton is cooked through, add the whole green chilies and ghee to the pan. Let it simmer for a few more minutes to absorb the flavors.
6. **Serve:** Before removing the dish from the heat, add the boiled eggs and sprinkle the garam masala powder on top. Cover the pan and let it sit for a few minutes to allow the flavors to meld together.
7. **Presentation:** Serve the delicious Mutton Glaze hot, paired perfectly with a side of polao or paratha.
Enjoy this mouthwatering dish, rich with spices and a creamy texture, ideal for special occasions or a comforting meal at home.
